Truffle Ravioli

Thin sheet of egg pasta with a cheese-based filling and black truffle (Tuber aestivum) inside. Excellent to be served only with truffle butter, with fresh truffle or simply in broth. Cook the ravioli over moderate heat for about 16 minutes in salted water.
